- 1 lemon (juice and zest)
- 4 Tbsps olive oil
- 1 clove garlic cloves (crushed)
- 2 cups canned navy bean (drained and rinsed)
- 1 Red onion (finely chopped)
- 2 Tbsps parsley (finely chopped)
- 4 bunches Tomatoes (on the vine)
- 8 slices rustic, italian white bread (or ciabatta)
- 1 clove garlic cloves (whole)
- 2 handfuls Arugula

Preparation steps
1.
Heat the oven to 200°C (180°C fan) 400°F gas 6.
2.
Mix the lemon juice, oil and crushed garlic and season with salt and pepper.
3.
Mix the haricot, beans, lemon zest and parsley and stir in the dressing.
4.
Put the tomatoes into the oven and roast for 15 minutes.
5.
Toast the bread and rub with the whole garlic clove.
6.
Pile spoonfuls of the vegetable mixture on each slice and top with rocket and the tomatoes. Serve immediately.
