- 4 cups Blackberry
- 1 ½ Tbsps Corn starch
- ½ tsp ground cinnamon
- ⅓ cup sugar
- For the topping
- 2 cups gluten-free all purpose flour
- ¼ cup sugar
- 2 tsps gluten-free Baking powder
- 1 pinch salt
- ⅓ cup butter
- ½ cup cream (35% fat)
- 1 egg
- 1 tsp vanilla extract

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a baking dish.
2.
Toss together the blackberries, cornflour and sugar. Place in the baking dish.
3.
for the topping: combine the flour, sugar, baking powder and salt in a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
4.
Whisk together the cream, egg and vanilla. Add to the dry ingredients and mix until just combined. Arrange rounds of the mixture on top of the berries.
5.
Bake for 30-40 minutes until the topping is golden and the filling is bubbling.
