1 cup gluten-free all purpose flour
¾ cup yellow Cornmeal
1 tsp gluten-free Baking powder
½ tsp baking soda
½ tsp salt
¼ cup sugar
1 cup Buttermilk
1 large egg
1 large egg white
2 Tbsps vegetable oil
1 Tbsp honey
1 cup grated carrots
1 cup sweet Corn (kernels)
1 green chili pepper (seeds removed, finely chopped)

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease an 23cm|9" cake or Bundt tin.
2.
Stir together the flour, cornmeal, baking powder, bicarbonate of soda, salt and sugar.
3.
Whisk together the buttermilk, egg, egg white, honey and oil until smooth.
4.
Pour the buttermilk mixture into the flour mixture and stir until just combined. Stir in the carrots, sweetcorn and chilli.
5.
Pour into the tin and bake for 25-35 minutes, until a skewer inserted in the centre comes out clean. Cool in the tin on a wire rack.
