2 ½ Tbsps butter
2 carrots (thinly sliced)
1 onion (finely diced)
1 clove garlic cloves (finely diced)
1 ¼ cups Red lentils (rinsed)
1 ½ cups Tomatoes (tinned)
3 ½ cups vegetable stock
1 tsp Cumin
4 cups fresh, young Spinach
1 ⅔ cups Brie (sliced)

Preparation steps

1.
Heat the butter in a pot and fry the carrots, onion and garlic for 2-3 min. Add the lentils and the tinned tomatoes. Add the stock and season with salt, ground black pepper and cumin.

Simmer on a medium heat for 15-20 min until the lentils are soft. If necessary, add some more stock.
3.
Stir in the spinach and season the soup to taste. Transfer to soup dishes, add the cheese and serve.
