1 head Savoy cabbage
salt
1 onion
200 grams Chorizo
4 Tbsps olive oil
150 grams almonds
1 tsp Orange zest
1 Tbsp lemon juice
2 Tbsps Orange juice
1 Tbsp apple cider vinegar
freshly ground peppers

Preparation steps

Rinse, trim and core cabbage. Cut into strips and blanch in salted boiling water, 2-3 minutes. Rinse with cold water and drain. Peel and finely chop onion. Thinly slice chorizo. In a pan, cook chorizo in 2 tablespoons hot oil until browned. Stir in onions, almonds, orange zest and cabbage. Cook, stirring often. Stir in lemon juice, orange juice and vinegar. Season with salt and pepper and transfer salad to plates. Serve drizzled with remaining oil.
