25 ozs Banana (chopped)
1 Lime (juice squeezed)
cup sugar
cup butter
2 eggs
2 ¼ cups all-purpose flour
2 tsps Baking powder
1 tsp cinnamon
1 cup Walnut (chopped)

Preparation steps

1.
Heat the oven to 180C (160C fan] 375F, gas 5.
2.
Purée the bananas with the lime juice. Butter a loaf pan.
3.
Mix the sugar with the butter, eggs and banana purée in a large bowl. Mix the flour, baking powder and cinnamon and stir into the banana mixture, a little at a time. Finally, stir in the nuts.
4.
Place the dough in the pan and bake for 80-90 minutes. Cover with aluminum foil after 45 minutes.
5.
Take the cake out and let cool slightly in the pan. Then turn it out onto a rack and let cool completely.
