- 1 ⅔ cups plain flour
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp Baking powder
- ⅞ cup soft brown sugar
- ½ cup butter (melted)
- 2 eggs
- 1 tsp vanilla extract
- 4 ripe Banana (mashed)
- 1 cup Walnut (chopped)
- butter (to serve)

Preparation steps
1.
Heat the oven to 180C (160C fan) 375F, gas 5.
2.
Sift the flour, salt, cinnamon and baking powder into a large mixing bowl.
3.
Add the sugar, butter, eggs and vanilla essence and beat well to form a batter that drops off the mixing spoon. Add a little milk if the mixture is too stiff.
4.
Stir in the bananas and walnuts and pour into a greased 1 kg/2 pound loaf tin.
5.
Bake for 45 - 50 minutes or until a skewer comes out clean. Let cool and serve sliced spread with butter.
