Walnut and Banana Loaf Cake

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a loaf tin with grease-proof paper.
Purée the bananas with the lime juice. Beat together the sugar, butter, eggs and banana purée. Mix together the flour, baking powder and vanilla seeds and gradually mix into the wet ingredients. Finally, stir in the walnuts.
Spoon the mixture into the tin and bake for 50-60 minutes. Cover with aluminium foil after around 45 minutes.
When the cake is cooked, remove from the oven and allow to cool slightly before removing from the tin.
Best served warm with butter.
