1 cube fresh Yeast (42 grams)
400 grams Whole wheat flour
100 grams Whole Grain Rye Flour
1 Tbsp salt
3 Tbsps sunflower oil
2 Apple
100 grams chopped Walnut
Pastry flour (for work surface)

Preparation steps

Whisk yeast in 300 ml (approximately 1 1/4 cup) of lukewarm water until smooth. Combine flour with salt in a mixing bowl, add dissolved yeast and oil and knead with a dough attachment of a hand mixer until smooth. Add a little warm water or flour, if necessary. Cover and let rise for 40 minutes in a warm place. Rinse apples and peel, quarter and core, grate finely.

Knead dough on a floured work surface and add grated apples and 8 tablespoons of chopped walnuts. Place dough into a loaf pan. Brush with warm water, sprinkle with remaining chopped walnuts, cover and let rest for about 15 minutes. Bake bread in preheated oven at 180°C (approximately 350°F) for about 60 minutes. Remove from oven and cool. Remove from pan and cut into slices. Serve with butter.
