- For Peaches
- 3 cups unsweetened, frozen sliced Peaches (or fresh)
- ½ cup golden brown sugar (packed)
- ¼ cup water
- 1 tsp ground cinnamon
- For Waffles
- 2 cups unbleached all-purpose flour
- 2 Tbsps granulated sugar
- 2 tsps Baking powder
- 1 tsp baking soda
- ¾ tsp salt
- 2 cups Buttermilk (shaken)
- 6 Tbsps unsalted butter (melted)
- 2 large eggs
- 2 tsps pure vanilla extract
- non-stick cooking spray (for waffle pan)

For Peaches:

In a heavy saucepan over medium heat, combine peaches, brown sugar, water, and cinnamon. Cook peaches, stirring frequently, until liquid is reduced to a medium thick syrup, about 12 to 15 minutes. Remove from heat; set aside to cool slightly.

For Waffles:

Preheat oven to 250º F (to keep waffles warm). Preheat waffle pan or iron.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract. Gradually whisk into flour mixture until just combined.

Coat hot waffle pan lightly with non-stick cooking spray. Pour batter into each waffle mold (about 1/2 cup).

Cook waffles according to manufacturer's instructions until cooked through and golden brown, approximately 3 to 4 minutes.

Transfer cooked waffles to rack in oven to keep warm, do not layer. Repeat until all the batter has been used.
9.
Divide waffles among plates. Garnish with warm peaches. Serve.
