Add more or less Tabasco to cater to your tastes.
Remove the leafy tops from the celery and reserve as a garnish. Peel and chop the sticks.
Combine them with the tomatoes, water, sugar, Worcestershire sauce, Tabasco, and some seasoning in a food processor or blender.
Blend on high until smooth, 1 - 2 minutes. Pass the juice through a sieve into a jug and squeeze in a little lemon juice, stirring well.
Rub the rims of four serving glasses with the lemon halves. Dip the rims in flaked sea salt and fill with the tomato juice.
Season with black pepper and garnish with lime wedges and celery leaves before serving.
