Vietnamese Seafood Salad
Top tip: Add 1 tbsp of salted peanuts to the salad for extra crunch and add 61 calories.
First make the dressing. Stir the sugar into the lime juice until it dissolves, then stir in the fish sauce, ginger, garlic and shallot. Leave to macerate for 10 minutes.
Cut the mango into small chunks, then toss with the prawns and rocket.
Drizzle over the dressing and serve immediately.
