These satisfying flatbread pizza slices are a good source lycopene from the tomatoes as well as the protein and calcium from the riccota, which is also low-fat.
Replace the all purpose flour in this recipe with whole wheat flour for added fiber.

- 2 ½ cups whole-wheat bread flour
- 1 tsp active dry yeast
- 1 tsp salt
- ⅞ cup warm water
- 1 Tbsp olive oil
- For the topping
- light olive oil cooking spray
- 4 large Plum tomato (chopped)
- 4 ozs button Mushrooms (sliced)
- 1 onion (sliced)
- 1 clove garlic cloves (finely chopped)
- salt
- freshly ground Black pepper
- 1 cup Ricotta cheese

1 Measuring cups, 1 Small pot, 1 Teaspoon, 1 Wooden spoon, 1 Kitchen scale, 1 Mixing bowl, 1 Hand mixer, 1 Kitchen towel, 1 Cutting board, 1 Baking sheet, 1 Parchment paper, 1 Tablespoon, 1 großer Pot, 1 Slotted spoon, 1 Small bowl, 1 Small knife, 1 Wire rack
Preparation steps
1.
For the base: mix together the flour yeast and salt in a mixing bowl. Make a well in the centre and pour in the water and oil. Mix to a soft, fairly wet dough.

Turn onto a lightly floured surface and knead for 5 minutes until smooth. Put into a lightly greased bowl, cover with a tea towel and leave to rise until doubled in size - about 1 hour.

Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.

Quickly knead the dough and roll out into a large thin round about 25 cm|10" in diameter. Place on the baking tray.

Heat the grill.

Place the vegetables and garlic in a large shallow bowl and spray with oil. Toss well until the vegetables are coated with oil.

Grill the vegetables for 5-6 minutes, turning frequently, until just tender. Season to taste with salt and black pepper.

Spray the pizza base with oil and spoon on the vegetable mixture and the cheese.
9.
Bake for 15- 20 minutes until golden and bubbling. Garnish with rocket and pine nuts.
