200 grams White bean
2 medium Tomatoes

Preparation steps

Peel and halve shallots. Drain beans. Blanch tomatoes, peel, remove stem and seeds, and chop. Peel carrot and cut into thick slices. Peel turnip and dice. Rinse scallions well, pat dry and leave whole. Rinse zucchini, remove stem and cut lengthwise into quarters and in pieces.

In a large pan, fry sage, carrots and turnip in hot oil for about 3 minutes, stirring often. Add scallions, shallots and zucchini and cook for another 3-4 minutes. Stir in tomatoes and beans and saute another 3 minutes. Season heavily with cumin, salt and pepper and serve immediately.
