150 grams green Asparagus
100 grams green Beans
salt
1 yellow Bell pepper
5 Radish
100 grams Grape tomato
120 grams white Beans (canned)
½ small Salad onion
4 Regensburger sausages (or other meat sausage)
3 Tbsps White vinegar
2 Tbsps Canola oil
freshly ground peppers
sugar
¼ tsp medium hot Mustard
2 Tbsps Whipped cream
2 Tbsps freshly chopped parsley

Preparation steps

1.

Peel bottom third of the asparagus and cut off the woody ends. Trim green beans and cut asparagus and green beans diagonally into pieces. Blanch until al dente in boiling salted water,  4-5 minutes. Drain and rinse in cold water. Drain well.

Rinse the bell pepper, cut in half, cut out ribs and seeds and cut into strips. Rinse radishes, trim and cut into thin slices. Rinse the tomatoes and white beans in a colander and drain.

Peel onion and cut into fine strips. Peel sausages and cut into thin slices. Mix all salad ingredients in a large bowl. Whisk vinegar, oil, mustard and creme fraiche into a vinaigrette and season with salt, pepper and sugar. Drizzle over the salad, mix well and let stand briefly. Arrange on plates and serve sprinkled with parsley.
