- 1 handful Radish
- 1 baby Lettuce
- ½ Cucumber
- 1 bunch scallions
- mint (or lemon balm leaves)
- 1 small handful Raspberry leaf
- 200 grams Cottage cheese
- 3 Tbsps coarse Mustard
- 1 Tbsp honey
- 2 Tbsps white balsamic vinegar
- 2 Tbsps vegetable oil
- salt
- peppers

Preparation steps
1.
Rinse, dry and halve radishes. Blanch scallions in hot water, drain and rinse in cold water, drain again. Chop. Rinse lettuce, spin dry and tear into smaller pieces. Peel cucumber, halve lengthwise and scrape out seeds, cut into thin slices. Rinse and dry raspberries. Rinse lemon balm leaves or mint, shake dry. Combine all ingredients and arrange on 4 plates.

Whisk mustard with honey, vinegar, oil and a little water until smooth, season with salt and pepper and drizzle over salad. Sprinkle cottage cheese over salad.

Serve salad with fresh bread.
