Ingredients

4 garlic cloves (thinly sliced)
2 Red chili peppers
8 scallions
150 grams shiitake mushrooms
1 handful Thai basil
450 grams Chicken breasts (with skin)
350 grams frozen King prawn (thawed)
soy sauce
white peppers (freshly ground)
4 Tbsps sunflower oil
400 grams cooked Basmati rice

Preparation steps

1.

Debone chicken breasts and cut into 8 pieces. Rinse and dry scallions, halve. Clean mushrooms and cut into slices. Rinse and shake dry basil. Rinse and halve chile peppers, remove seeds and ribs and chop finely.

Heat oil in a wok or a large frying pan. Saute garlic slices until golden, remove from the wok. Add meat to the wok and saute, stirring, until meat is almost done, add prawns and cook for a few more minutes. Season with salt and pepper. Remove chicken and prawn from the wok and keep warm.

Add scallions and mushrooms to the wok and saute for about 1-2 minutes. Remove from the wok and and keep warm. Add rice to the wok and saute, stirring, for about 5-6 minutes. Season with soy sauce and pepper. Add Thai basil (set some aside) and mix well. Place rice into bowls and top with scallions, mushrooms, prawns and chicken. Garnish with Thai basil and fried garlic slices. Serve.
