18 ozs waxy potatoes (peeled and diced)
2 red peppers (diced)
1 onion (diced)
2 Zucchini (sliced)
4 Tomatoes (peeled and chopped)
2 cups sliced Mushrooms
2 Tbsps fresh Fresh herbs (e. g. thyme, oregano, parsley, chopped)

Preparation steps

1.
Bring the stock to the boil and add the potatoes.
2.
After 10 minutes add the peppers and the onion.
3.
After a further 10 minutes add the courgette, tomatoes and mushrooms. Simmer for 5-10 minutes. Finally add the herbs and season with salt and ground black pepper.
