Coconut contains the saturated fatty acid lauric acid, which is effective against pathogens, and can help kill flu and herpes viruses. Coconut milk also scores points with pantothenic acid (vitamin B5), which plays an important role in carbohydrate, fat and protein metabolism.
Instead of raspberries you can also use other frozen fruits. Blueberries, mango and bananas are ideal, for example. The finished ice cream can be sprinkled with coconut flakes to further enhance the coconut harmona.

- 1 Tbsp coconut sugar

Preparation steps
Put deep-frozen raspberries with coconut milk and coconut blossom sugar in a blender and puree finely at the highest setting. Add a little cold water if necessary.
Serve raspberry and coconut ice cream immediately.
