- 4 sesame Burger buns (split)
- 2 cups Tofu (diced)
- 2 Tbsps olive oil
- ½ cup fresh breadcrumbs
- 2 small Tomatoes (slices)
- 1 Tbsp parsley
- cilantro (to garnish)
- salt
- peppers

Preparation steps
1.
Pre-heat the grill to hot.
2.
Place the tofu, olive oil, breadcrumbs, parsley leaves and seasoning in a food processor and pulse until coarse in texture. Remove and shape into 8 small, even patties.
3.
Arrange on a baking tray line with greaseproof paper. Grill for 10-12 minutes, turning occasionally, until lightly coloured.
4.
Use a 5cm cookie cutter to cut out two rounds from each piece of burger bun; you should have 8 tops and 8 bottoms.
5.
Remove the tofu patties when ready and place on the 8 bottom halves. Top with a few slices of tomato and a sprig of coriander leaves.
6.
Arrange the tops in place. Serve immediately.
