- 1 cup Potato starch (scant)
- 1 cup Corn starch
- ½ cup Potato starch (scant)
- ⅓ cup Rice flour
- 1 ½ tsps sugar
- 1 ½ tsps salt
- 2 tsps xanthan gum
- ⅓ cup Almond flour
- ½ oz quick-rising active dry yeast
- 2 Tbsps olive oil
- 1 ½ cups tepid water

Preparation steps
1.
Heat the oven to 220°C / 425°F. Grease a baguette tin.
2.
Put all the flours, salt, sugar and xanthan gum into a food processor.
3.
Add the ground almonds and yeast and pulse 2 - 3 times to mix thoroughly.
4.
Mix together the oil and water and pour 1 cup into the food processor and mix for 2-3 seconds.
5.
Pour in another 7 Tablespoons (3.3 ounces) of the water and oil and mix for another 2 - 3 seconds.
6.
Add the remaining water a little at a time until the mixture is the consistency of a stiff sponge cake - it should fall off a spoon, but hold its shape well.
7.
Place in the tin and smooth the top with the back of a wet tablespoon.
8.
Bake in the oven for 20-30 minutes until risen, golden brown and sounding hollow when tapped on the base. Place on a wire rack to cool.
