500 milliliters Whipped cream
60 grams sugar
2 Passion fruit
1 Kiwi
1 tsp honey
1 tsp lemon juice
1 Tbsp Sesame seeds (toasted)

Preparation steps

Bloom the gelatin in cold water. Cut the vanilla bean in half lengthwise and bring to a boil with the cream and sugar. Reduce the heat and simmer for 10 minutes then remove from the heat and let cool briefly. Squeeze out the excess water from the gelatin and stir into the cream mixture. Let cool for about 10 minutes then remove the vanilla bean. Rinse 4 serving glasses with cold water, fill with the vanilla cream and chill for at least 4 hours, covered.

Cut the passionfruit in half and scrape out the pulp. Strain through a fine-mesh strainer or sieve to remove the seeds. Peel the kiwi and mash the pulp until lumpy with a fork. Mix with the passionfruit purée, honey and lemon juice, spoon over the panna cotta and serve sprinkled with sesame seeds.
