- For the cake
- 300 grams soft butter
- 150 grams Pastry flour
- 150 grams cornstarch
- 300 grams sugar
- 300 grams eggs (4-5 eggs)
- 2 Vanilla bean (seeded)

Preparation steps

Grease pan with butter and dust with flour.

For the cake, cream soft butter in a mixing bowl until fluffy, and mix in 2/3 of the sugar while stirring. Separate the eggs. Add yolks to the butter mixture and beat until creamy. Mix in flour, cornstarch and vanilla beans and stir briefly. Beat egg whites with remaining sugar until stiff. Stir a little of the beaten egg whites meringue into the batter, then fold in remaining egg whites gently. Pour batter into prepared pan and smooth the surface. Bake in a preheated oven at 200°C (approximately 400°F) until a toothpick inserted into the center comes out clean, about 1 hour. Cool the finished cake in the pan for a few minutes, then unmold and cool on a wire rack before slicing and serving.
