½ l milk
¼ l Whipped cream
1 Vanilla bean
7 egg yolks
200 grams sugar
200 grams mixed candied Fruit (chopped, as desired)
6 Tbsps finely chopped Pistachio

Preparation steps

1.

Combine the milk and cream in a saucepan. Cut the vanilla bean lengthwise, scrape out the inside, and add both to the cream/milk. Bring the mixture to a boil, then reduce heat. 

2.

Beat the egg yolks and the sugar in a bowl until creamy.

3.

Slowly pour the milk into the eggs while stirring, then pour everything back into the pot, remove the vanilla pod and stir over low heat with a wooden spatula until the cream begins to thicken. Do not allow to boil. 

4.

Pour the mixture through a sieve and allow to cool over a bowl of ice water, stirring occasionally. Fold in the candied fruit as desired.

5.

Pour the cold cream into the ice cream maker and finish. 

6.

(To finish without an ice cream maker, pour mixture into a shallow metal tray and place in the freezer, stirring once an hour for 4-5 hours until frozen.)

7.

Serve scoops of finished ice cream sprinkled with pistachios.
