1 Vanilla bean
7 egg yolks
200 grams sugar

Preparation steps

1.

Combine cream and milk in a saucepan. Cut vanilla bean lengthwise, scrape out vanilla seeds and add to milk mixture. Bring to a boil, stirring.

2.

Beat egg yolks and sugar until creamy in a bowl.

3.

Pour boiled milk into egg yolk mixture, stirring and pour back into pot. Remove vanilla bean and simmer on low heat, stirring with a wooden spatula, until cream begins to thicken. Do not allow to boil.

4.

Strain cream through a sieve and leave to cool on ice water, stirring occasionally.

5.

Pour cold cream in ice cream maker and follow instructions.

6.

(If there is no ice cream machine, pour into a shallow metal tray and freeze in a freezer, stir well and frequently in the first hour so that no large crystals form).

7.

(Makes approximately 1 liter (approximately 4 cups) of ice cream. Approximately 16 servings)

8.

Arrange ice cream with fresh strawberries and raspberries in dessert bowls. Serve.
