750 grams bread dumpling
500 milliliters milk
200 grams Bacon
1 onion
100 grams butter
2 Tbsps freshly chopped parsley
3 eggs
salt
freshly ground peppers
freshly grated Nutmeg
breadcrumbs (as needed)
4 Tbsps scallions

Preparation steps

Place bread in a bowl. Bring milk to a boil and pour over bread. Dice bacon and add to bread. Pee onion and chop finely. Heat 1 tablespoon of butter in a pan and saute onion until translucent. Add parsley and mix well. Add onion mixture to bread and bacon. Add eggs and season with salt, pepper and nutmeg and knead well. Let rest about 15 minutes. Knead again briefly, add breadcrumbs or milk as needed. With moistened hands, form 12 dumplings and cook in boiling salted water for about 20 minutes, simmering gently.

Heat up remaining butter in a pan, skimming any resulting foam.

Remove dumplings with a slotted spoon from water and drain well. Place in a bowl and drizzle with melted butter. Sprinkle with chives and serve.
