4 slices crispy Bacon (crumbled)
1 medium Leek (white part only; cut into rings)
salt (to taste)
1 ½ cups canned red Kidney beans (rinsed and drained)
1 Cucumber (rinsed and diced)
2 ½ cups Cocktail tomatoes (sliced)
1 cup canned chickpeas (drained)
1 handful Arugula
4 Tbsps Herb vinegar
1 tsp honey
4 Tbsps grapeseed oil
2 Tbsps water
0.333 cup crumbled Blue cheese

Preparation steps

1.
Blanche the leek in salted boiling water for about 2 minutes. Plunge into cold water and drain.

Layer the kidney beans, cucumber, tomatoes, chickpeas and leek onto salad plates and arrange the greens on top.
3.
To make the dressing; combine the vinegar, honey, oil and water. Season the dressing with salt and drizzle over the salad. Sprinkle crumbled bacon and cheese on top and serve.
