- 4 slices crispy Bacon (crumbled)
- 1 medium Leek (white part only; cut into rings)
- salt (to taste)
- 1 ½ cups canned red Kidney beans (rinsed and drained)
- 1 Cucumber (rinsed and diced)
- 2 ½ cups Cocktail tomatoes (sliced)
- 1 cup canned chickpeas (drained)
- 1 handful Arugula
- 4 Tbsps Herb vinegar
- 1 tsp honey
- 4 Tbsps grapeseed oil
- 2 Tbsps water
- ⅓ cup crumbled Blue cheese

Preparation steps
1.
Blanche the leek in salted boiling water for about 2 minutes. Plunge into cold water and drain.

Layer the kidney beans, cucumber, tomatoes, chickpeas and leek onto salad plates and arrange the greens on top.
3.
To make the dressing; combine the vinegar, honey, oil and water. Season the dressing with salt and drizzle over the salad. Sprinkle crumbled bacon and cheese on top and serve.
