500 grams waxy potatoes
1 egg
2 Tbsps Pastry flour
salt
freshly ground peppers
600 grams turkey breasts
50 grams clarified butter

Preparation steps

1.

Peel and coarsely grate potatoes. Mix with the egg and flour. Season with salt and pepper.

Rinse the turkey breast and pat dry. Cut into four strips and pound a little flat. Season with salt and pepper, wrap with potatoes and press well. Cook slowly in hot butter in a pan on both sides until golden brown, 10-12 minutes. Turn gently and baste occasionally with the butter.

Cut and serve in strips.
