Turkey Rolls with Peach Sauce

- 4 large thin Turkey cutlets
- 100 milliliters Nut oil
- 100 grams mild Feta
- 100 grams sun-dried Tomatoes
- 100 grams Macadamia Nuts
- 1 bunch Basil
- 1 Tbsp vegetable oil
- 2 Tbsps Tomato paste
- 200 milliliters Chicken broth (from a jar)
- 200 milliliters Red wine
- 150 grams Double cream
- 250 grams white Peaches
- 1 Tbsp lemon juice
- salt
- peppers
Preparation steps
Rinse meat, pat dry, place in a bowl, sprinkle with a little oil and place in the refrigerator for 4 hours. Cut the sun-dried tomatoes into strips, crumble the cheese and finely chop half the nuts. Pluck basil leaves place 1/4 of the leaves over the meat slices and dtop with cheese filling. Roll tightly, tie with kitchen twine and place in a baking dish. Mix tomato paste with remaining oil, spread over meat and bake for 40 minutes in a preheated oven at 180°C (approximately 350°F).
Remove from the baking dish and keep warm. Deglaze baking dish with broth and wine. Stir in cream and simmer for 10 minutes while stirring. Season with salt, pepper and lemon juice. Rinse peaches, halve and core. Cut into slices and heat briefly in the sauce. Cut turkey rolls crosswise, sprinkle with remaining nuts and serve with the peach sauce.
