4 fresh Tuna steak (each approximately 180-200 grams)

2 Tbsps olive oil
125 milliliters dry Marsala wine
3 Tbsps cold butter

Preparation steps

1.

Rinse oranges and lemons with hot water and pat dry. Peel zest of 1 orange and lemons into very thin spirals and very finely chop. Squeeze juice from all fruits.

Season tuna with salt and pepper. Heat oil in a large skillet over medium heat, fry tuna on each side for about 3-5 minutes (to taste). Remove tuna from pan and keep warm in a preheated 70°-80°C (approximately 150°F) oven.

Add orange juice, lemon juice and Marsala to the pan and bring to a boil. Cut butter into small pieces and beat into the sauce with a whisk. Add lemon peel and orange peel, stir and season with salt and pepper. Serve fish fillets on plate and cover with the sauce. Serve with fresh white bread if desired.
