- 300 grams white Couverture
- 100 grams Whipped cream
- 4 Tbsps Pear brandy (such as Williams Christ)
- 50 grams butter and Coconut oil
- 1 pinch salt
- 40 small Chocolate molds
- 20 grams candied violets and Rose petal
Preparation steps
1.
Cut the chocolate into pieces and melt over a hot water bath. Heat the cream and pear brandy. Cut the coconut oil and butter into pieces, add to the brandy mixture and melt while stirring. Add a pinch of salt.

Cool the mixture slightly and stir into the chocolate. Refrigerate until the mixture can be poured into a piping bag. Use a large star tip large fill and pipe into the chocolate molds.
3.
Decorate with candied violets and rose petals and refrigerate until set. remove from the molds and serve.
