2 Cucumber
2 Tbsps white balsamic vinegar
8 Tbsps olive oil
200 grams Salmon
6 Leeks
200 grams Smoked salmon (sliced)
Leeks (for garnish)

Preparation steps

1.

Peel pineapple, cut in half lengthwise and thinly slice flesh. Rinse cucumber, trim ends and quarter, then slice. 

2.

Lay pineapple and cucumber slices in a baking dish. Drizzle with vinegar and 6 tablespoons of olive oil and marinate for 30 minutes, turning once after 15 minutes.

In the meantime, rinse salmon fillet, pat dry with paper towels and mince. Rinse chives, shake dry and slice. Combine salmon chives and remaining olive oil, season with salt and pepper.

4.

Plate cucumber and pineapple slices with smoked salmon. Add salmon tartare and serve garnished with chives.
