Tropical Coconut Prawns
- 16 Prawn (peeled, de-veined with tails intact)
- ¼ cup olive oil
- 2 Tbsps runny honey
- Lime juice (from two limes)
- 1 cup Shredded coconut
- Lime wedge (to garnish)
- ⅔ cup light soy sauce (to serve)
Pre-heat the grill to hot. Whisk together the honey, olive oil and lime juice until smooth and combined.
Add the prawns to this mixture, then remove and arrange on lined baking trays.
Sprinkle the desiccated coconut all over them, making sure they are evenly coated.
Grill for 4-5 minutes, turning once, until pink and tender.
Arrange on serving plates with a pot of the soy sauce to one side for dipping. Garnish with lime wedges and any extra desiccated coconut before serving.
