Preparation steps
1.
Rinse scallions, trim and cut diagonally into small rings. Reserve some scallion rolls for garnish. Coarsely chop olives. Reserve 1-2 tablespoons olives.

Preheat the oven to 180°C (approximately 350°F). Melt butter in a pan, fry scallions and olives while stirring for about 2 minutes and season with coriander, oregano, salt and pepper. Remove from the pan and let cool slightly.
3.
Cut feta into small cubes and mix in a bowl with the olive mixture. Rinse tomatoes, cut in half horizontally and scoop out seeds and inner ribs. Fill tomatoes with olive and feta mixture and place tomatoes in a baking dish. Bake in the preheated oven for about 15 minutes. Garnish with reserved scallions and olives and serve.
