Tomato Toasts with Preserved Fish
- 8 ripe tomatoes
- 2 Tbsps balsamic vinegar
- 1 Ciabatta (loaf)
- 1 clove garlic cloves (halved)
- extra virgin olive oil
- 2 Tbsps torn Basil
- 1 can Anchovy (in oil)
- 1 tsp peppercorns (lightly crushed)

Pour boiling water over the tomatoes and remove them after 30 seconds. skin and and cut into quarters, scoop out the seeds and chop roughly.
Mix the tomatoes with the salt, pepper and balsamic vinegar.
Heat the grill.
Slice the loaf and grill the slices until golden. Rub with the cut garlic cloves and drizzle with olive oil.
Spoon the tomato mixture onto the bread and sprinkle with the torn basil. Place the anchovies on top and scatter over the peppercorns.
