Preparation steps

1.

Blanch the tomatoes in boiling water. Rinse the tomatoes under cold water, the peel. Cut into quarters and remove the seeds. Peel the oranges with a sharp knife, making sure to remove the bitter white pith. Remove the whole fruit segments. Reserve any juice created during this process in a bowl. Squeeze what remains of the oranges into the bowl.

2.

Rinse the scallions. Thinly slice the scallions, making sure to keep the white parts and the green parts separate. Rinse the parsley and remove the leaves from the stems.

3.

Peel and finely dice the ginger.

4.

Add all of the ingredients (except the green parts of the scallions) to the blender, then puree for 3 minutes. Season to taste with salt.

5.

Pour the smoothie into glasses. Garnish the glasses with the scallion greens and freshly cracked black pepper, and serve immediately.
