2 red Bell pepper
1 garlic clove
60 grams sun-dried Tomatoes (without oil)
2 Tbsps olive oil
1 tsp sweet ground paprika
400 grams crushed Tomatoes (canned)
150 milliliters Vegetable broth
2 Tbsps freshly chopped parsley
1 tsp lemon juice
1 tsp honey
salt
freshly ground peppers

Preparation steps

Rinse and halve the peppers. Trim the peppers, then julienne. Peel and finely dice the garlic. Julienne the sun-dried tomatoes. Heat the oil in a pan, and sauté the peppers, garlic, and the sun-dried tomatoes for 2-3 minutes. Add the paprika, sauté briefly, then mix in the tomatoes and the broth. Simmer gently for 10 minutes.

Mix in the parsley. Season to taste with lemon juice, honey, salt, and pepper.
