800 grams Plum tomato (ripe)
1 onion
1 garlic clove
2 Tbsps vegetable oil
100 milliliters white wine
½ jar pickled peppers (green)
salt
½ bunch parsley
1 tsp sugar

Preparation steps

Cut tomatoes crosswise from the bottom and blanch briefly in boiling water. Drain, rinse in cold water and peel. Quarter and remove seeds, chop coarsely.  Peel onion and garlic and chop. Heat oil in a pan and saute onion and garlic for a few minutes. Add tomatoes and bring to a boil. Add wine and simmer, covered, for 10 minutes on low heat.

Drain pickled peppers and add to the sauce. Rinse parsley, shake dry, pluck off leaves and chop finely, setting aside few leaves for garnishing. Add parsley to the sauce and season with salt, pepper and sugar. Garnish with parsley leaves and serve.
