3 small onions
4 garlic cloves
5 Tbsps olive oil
2 fresh bay leaves
2 sprigs thyme
1 sprig rosemary
2 sprigs oregano
1 sprig Basil
salt

1 pinch sugar

Preparation steps

1.

Blanch the tomates, peel and cut into cubes. Peel and finely chop the onions and the garlic. Heat the olive oil in a large pot and sauté onions and garlic until transparent. Mix in tomatoes.

Gently simmer the tomato mixture over medium heat, stirring occasionally, for about 1 hour, until slightly creamy.

Wash the herbs, shake dry, and tie a bouquet. Add to the pot with the tomato sauce during the last 20 minutes of cooking. The tomatoes should finely disintegrate during the cooking process. Using a potato masher, break apart tomatoes, as needed.

4.

Remove the herbs. Season the tomato sauce with salt, lemon juice, pepper and sugar. While sauce is still hot, fill the bottles to the top. Close immediately and leave to cool.
