- 4 medium Baguette (or 8 small)
- 2 Tbsps Oil
- 1 clove garlic cloves
- For the salad
- 1 stalk Celery
- 2 large, red Heirloom tomato
- ⅔ cup yellow Grape tomato
- ⅔ cup red Cherry tomatoes
- 1 Red onion
- 1 Tbsp snipped scallions
- salt
- peppers
- 2 Tbsps balsamic vinegar
- 1 Tbsp lemon juice
- 1 pinch sugar
- 2 Tbsps Oil
- 1 generous pinch Mustard
- ½ cup crumbled Blue cheese (i.e. Gorgonzola or sheep's cheese)
Preparation steps

Trim, wash and slice the celery. Wash and drain all the tomatoes, and slice, halve or quarter depending on size. Peel, halve and thinly slice the onion. Mix the tomatoes, celery, onion and scallion greens. Mix the vinegar, lemon juice, salt, sugar, pepper, mustard and oil to make a vinaigrette and dress the salad.

Peel and chop the garlic. Heat the oil and saute the garlic, then take out of the skillet and fry the bread in the oil.

Pile the salad on the fried bread and scatter with cheese. Serve at once.
