- 16 ozs potatoes (peeled and sliced 1/4 inch thick)
- 24 ozs Tomatoes (sliced 1/4 inch thick)
- 1 cup Asiago cheese
- 1 cup shredded Provolone cheese
- 1 cup shredded Parmesan
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- parsley

Preparation steps
1.
Preheat oven to 400º F / 200º C. Grease a shallow round baking dish, approximately 9 inches.

Alternate potato and tomato slices in a layer, slightly overlapping, in a circular direction. Season with salt and pepper. Top with a portion of the cheeses. Repeat layers.
3.
Cover with foil, and bake for 40 minutes. Remove foil, and bake another 10 minutes or until cheese is slightly browned and bubbly. Let stand a few minutes before serving. Garnish with chopped fresh parsley.
