- 500 grams red Tomatoes (very ripe)
- 2 chili peppers
- 500 grams jam sugar (2:1 ratio)
- 75 milliliters balsamic vinegar (to taste)

Preparation steps

Rinse the tomatoes, and roughly chop half of them. Puree the roughly chopped tomatoes. Finely dice the remaining tomatoes. Rinse and halve the chilies. Remove the seeds and membranes, and julienne. Mix the vegetables and the puree with the sugar in a saucepan. Heat slowly, stirring often.

Season the mixture to taste with the vinegar. Cook the jam for 4-5 minutes. If the mixture hasn't gelled enough, cook another 2-3 minutes. Fill the prepared jars to brim with the jam. Seal tightly and cool completely.
