Preparation steps

Peel the garlic and finely chop. Rinse celery, trim and cut into small cubes. Rinse the tomatoes and cut each into 8 pieces. Heat oil in a pan and cook garlic until translucent. Add celery and tomatoes and simmer for about 40 minutes over medium heat. Press through a sieve or pass through a food mill and add the thyme leaves.

Pour into glasses and allow to cool before serving.
