- 300 grams Peas
- salt
- 1 garlic clove
- 2 Tbsps olive oil
- 2 Tbsps lemon juice
- freshly ground peppers
- 2 Tomatoes
- 4 slices Wheat bread
- mint (for garnish)

Preparation steps
1.
Blanch the peas in boiling salted water for 5 minutes. Remove from the water, rinse under cold water, and drain thoroughly. Mash the peas with a fork, or puree in the blender. Peel the garlic and pass through a press. Puree the peas with the olive oil and lemon juice. Season to taste with salt and pepper.
2.
Rinse the tomatoes, remove the cores, and cut into slices. Spread the peas onto the bread, and top with the tomatoes. Garnish with the mint and serve.
