1 cup Basmati rice
3 Tbsps sesame oil
2 cloves garlic cloves (finely chopped)
1 onion (finely diced)
2 tsps freshly grated ginger
1 red chili pepper (deseeded and seeds removed)
½ Lime (juice and finely grated zest)
3 ½ cups Coconut milk
1.333 cups peas (frozen)
18 ozs turkey breasts (cut into short strips)
salt
brown sugar
soy sauce
To garnish
cilantro

Preparation steps

1.
Cook the rice in boiling salted water according to the packet instructions.

Heat 2 tablespoons sesame oil in a wok or a large frying pan. Add the garlic, onion, ginger, chilli and lime zest and cook gently for 1 minute.
3.
Add the coconut milk and cook for about 10 minutes over a low heat until reduced slightly. Add the frozen peas after 5 minutes.
4.
At the end of the 10 minutes add the turkey and cook very gently in the sauce for a few minutes until the meat is cooked. Add salt, sugar, lime juice and soy sauce to taste.
5.
Serve the turkey with rice and garnish with coriander.
