53 ozs green Tomatoes (roughly chopped)
16 ozs cooking Apple (peeled, cored and chopped)
24 ozs shallots (or onions)
2 cloves garlic cloves (optional)
1 ½ cups Golden raisins
1 tsp salt
½ tsp cayenne pepper
½ oz fresh ginger (bruised)
2 cups light brown sugar
2 ½ cups Vinegar
To garnish
1 red chili pepper (finely chopped)
thinly sliced onions

1 Bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Mandoline, 1 Sieve, 1 Salad spinner

Preparation steps

1.
Put the tomatoes, apples, shallots, garlic and sultanas in a large heavy-based pan with the salt and cayenne pepper.

Tie the ginger loosely in a piece of muslin and add to the pan.
3.
Stir in a little of the vinegar and cook gently over a low heat for about 1 hour until the vegetables and fruit are soft, stirring from time to time. Remove from the heat and stir in the sugar and remaining vinegar.
4.
When the sugar has dissolved completely, return to the heat and bring to a boil. Reduce the heat and simmer gently for 1-1 1/2 hours until thick.
5.
Spoon into hot sterilised jars, seal and label. Serve garnished with chilli and thinly sliced onion.
