1 kilogram predominantly waxy potatoes
1 egg

4 Tbsps sunflower oil

Preparation steps

1.

Peel potatoes, coarsely grate and wrap in a damp tea towel. Place in a bowl.

2.

Let potatoes stand until they begin to release water. Pour off liquid.

3.

Mix grated potatoes with potato starch and egg. Season with salt and freshly grated nutmeg.

4.

Heat oil in a pan over medium heat. Place small heaps of potato mixture in pan and flatten with a spatula. Cook until golden-brown, 1-2 minutes per side. Drain on paper towels.
