2 Tbsps Rum
2 Tbsps Maple syrup
4 Tbsps Pecan

Preparation steps

1.
Place the milk and cream in a pot with the ginger and bring to the boil. Mix together the egg yolks with 100 g sugar until creamy. Stir the hot milk-cream into the egg yolk mixture, pour everything back into the pot and simmer on a low heat stirring continuously until the mixture thickens. Do not allow to boil!

Sieve the cream and leave to cool. Pour the mixture into an ice cream maker. Alternately pour the mixture into a flat metal bowl and freeze for at least four hours stirring every 30 min.

Caramelise the remaining sugar in a pan and add the bananas, orange juice and lemon juice. Season with a pinch of salt, rum and maple syrup and simmer for 2 min.

Use an ice cream scoop to serve the ice cream on plates with the caramelised bananas and the nuts. Garnish with mint leaves.
