- 1500 grams Crookneck pumpkin
- 6 garlic cloves
- 3 chili peppers
- 1 tsp peppercorns
- 500 milliliters White vinegar
- 500 grams sugar

Preparation steps

Peel pumpkin, remove seeds and dice flesh into 1.5 cm (approximately 1/2 inch) cubes.

In a pot, combine peeled garlic with chiles, peppercorns and vinegar. Bring to a boil. Add diced pumpkin, remove from heat, cover and marinate 24 hours. Then stir in the sugar and simmer until pumpkin is tender, but not mushy. Transfer mixture to hot, rinsed jars and seal. Let cool. Refrigerate up to 3 weeks. Tip: To preserve the pumpkin relish longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
