Ingredients

4large onions finely sliced
⅔ cupshoney
½ cupssoft light brown sugar
⅔ cupswhite wine vinegar
½ teaspoonsred peppercorns crushed
½ teaspoonssalt

Directions

1 Place all the ingredients for the jam in a large saucepan.
2 Bring to the boil over a moderate heat, stirring occasionally to help dissolve the sugar then reduce the mixture to a simmer.
3 Simmer for 60-70 minutes until thick. Remove from the heat and leave to cool to one side.
4 Spoon into sterilised jars and seal well.
